Smoking Time Guidelines
Smoking a turkey typically takes 30 to 40 minutes per pound at 225°F to 250°F. For a 12-pound turkey, expect approximately 6 to 8 hours of smoking time.
Temperature and Time Variations
The smoking duration varies based on your smoker temperature:
- 225°F : 30-35 minutes per pound (a 14-pound turkey takes about 8 hours)
- 250°F : 30 minutes per pound (a 14-pound turkey takes about 7 hours)
- 275°F : 25 minutes per pound (a 14-pound turkey takes about 5½ hours)
- 325°F : 13 minutes per pound (a 14-pound turkey takes about 3 hours)
Internal Temperature Target
Your turkey is done when it reaches an internal temperature of 165°F in the thickest part of the breast and 175°F in the thigh. Always use a meat thermometer to verify doneness rather than relying solely on time.
Time-Saving Method
Spatchcocking (removing the backbone and flattening the turkey) significantly reduces cooking time to approximately 2 to 3 hours at higher temperatures. This method helps the turkey cook more evenly and allows for better smoke penetration.
After smoking, let your turkey rest for at least 20 to 30 minutes before carving to allow juices to redistribute.
