- Preheat oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or line a rimmed baking sheet with parchment paper for easier cleanup and crispier edges.
- Sauté the onion in a bit of oil over medium heat until softened and golden, about 5-7 minutes. Let cool slightly.
- Mix the meatloaf ingredients : In a large bowl, combine ground beef, sautéed onion, eggs, breadcrumbs, milk, salt, pepper, and any additional seasonings you like (garlic, parsley, Italian seasoning). Mix gently with your hands just until combined to avoid a dense loaf.
- Shape the meatloaf : Transfer the mixture to the loaf pan or shape into a loaf on the baking sheet (about 8 inches long, 4 inches wide, and 3 inches tall).
- Bake uncovered for about 40 minutes.
- Prepare the glaze : Mix ketchup, brown sugar, and a little mustard or vinegar if desired.
