To roast garlic, follow these steps:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the garlic by either slicing the top off the whole head to expose the cloves or slicing the head in half. If roasting whole heads, remove outer papery layers but keep cloves attached.
  3. Drizzle the garlic with olive oil, rubbing it into the cloves for even coverage.
  4. Wrap the garlic loosely in foil to create a parcel or place the sliced halves on foil and wrap.
  5. Roast in the oven for about 30 to 40 minutes until the garlic turns golden and feels soft.
  6. Optionally, unwrap the foil for the last 5 minutes to caramelize further.
  7. Allow to cool, then squeeze out the soft roasted cloves.

For individual cloves, peel and place in a foil packet with oil, then roast for 20-40 minutes until tender. Roasted garlic is sweet, mellow, and perfect for spreading or adding to dishes.
