To locate the glands that produce salivary amylase, check the major salivary glands in the mouth. The enzyme salivary amylase (also called ptyalin) is produced primarily by the parotid glands, with additional contribution from the submandibular and sublingual glands, as part of saliva secreted into the oral cavity. These glands are located in the heads and neck region: the parotid glands wrap around the mandible near the upper molars, the submandibular glands sit beneath the lower jaw, and the sublingual glands lie beneath the tongue.
