  • 2 cups turkey or chicken stock, or strained pan drippings (add more to thin if needed).
  • Salt and pepper to taste.

Quick stovetop method

  1. Melt butter in a medium saucepan over medium heat.
  1. Whisk in flour and cook 2 to 3 minutes until it smells toasty and looks light golden; this is your roux.
  1. Slowly whisk in the stock or drippings a little at a time so it stays smooth.
