Use this super simple method for classic, smooth turkey gravy using either pan drippings or broth.
Basic ingredients
- 4 tablespoons butter.
- 4 tablespoons all-purpose flour.
- 2 cups turkey or chicken stock, or strained pan drippings (add more to thin if needed).
- Salt and pepper to taste.
Quick stovetop method
- Melt butter in a medium saucepan over medium heat.
- Whisk in flour and cook 2 to 3 minutes until it smells toasty and looks light golden; this is your roux.
- Slowly whisk in the stock or drippings a little at a time so it stays smooth.
- Bring to a gentle boil, then reduce to a simmer and cook, whisking, until thickened, about 3 to 5 minutes.
- Taste and season with salt and pepper; thin with a splash of extra stock or water if it gets too thick.
