"Torta coi bischeri" is a traditional Tuscan dessert from the Pisa area, dating back to the 1200s. It is a rustic pie made with a filling of rice, dark chocolate, cocoa, pine nuts, raisins, candied fruit, sugar, eggs, and spices such as nutmeg and cinnamon, often flavored with liqueurs like Strega and rum. The dough includes eggs, sugar, butter, baking powder, vanilla sugar, and lemon zest, rolled thinly to line the baking tin. The distinctive "bischeri" are small pyramid-shaped edges of dough decorating the pie's perimeter, resembling guitar tuning heads. It is baked at 180 degrees Celsius for about an hour and a half. This cake was traditionally made to honor pilgrims visiting the area around Pisa.
