The animal that poops coffee beans is the Asian palm civet, a catlike creature native to Southeast Asia. The civet eats coffee cherries and partially digests them in its digestive system. The digestive enzymes in the civets stomach change the structure of proteins in the coffee beans, which removes some of the acidity to make a smoother cup of coffee. After the digestion process, the civet poops out the partially-digested coffee beans, which are then handpicked from the poop, washed, dried, and roasted to make kopi luwak, also known as civet coffee. The coffee made from civet poop is considered the worlds most expensive coffee.
