Coins in Mario Kart 8 have three main uses:

Increase overall speed: Each coin you collect boosts your overall speed, increasing your top speed, especially on straightaways. The effect maxes out at 10 coins.

Give a small speed boost: For each coin you collect, you get a very small speed boost, even after youve collected the maximum of 10 coins. So keep collecting them!

Unlock stuff: You must collect coins to unlock karts and parts. Each coin you collect adds to an overall coin count. Every unlockable is tied to this coin count, and parts are unlocked for every 50 coins and then every 100 coins you collected after you unlock the 1000 coin customization item.
Coins are scattered across each stage, and players need to drive over them to collect them. Coins are also available in Item Boxes, where players can also collect weapons. Whenever players pick up these coins, there’s a minor effect - players will get a tiny speed boost. Coins placed on the track can highlight the curve of the track, help players stay on track, and highlight secret paths and shortcuts.
