Pasture-raised eggs are laid by hens that are allowed to roam freely on open pastures, where they can forage for local grasses, succulents, and wildflowers while enjoying fresh air and sunshine. The hens are given a minimum of 108 square feet of roaming room in fresh pastures. They are also allowed to consume some feed and lots of grass, bugs, worms, and anything else they can find in the dirt. The hens tend to be let out of the barns early in the morning and called back in before nightfall.

Compared to eggs from hens raised on traditional feed, pasture-raised eggs contain twice as much omega-3 fat, three times more vitamin D, four times more vitamin E, and seven times more beta-carotene. They also tend to have darker, richer yolks due to the excess space provided to the hens, which allows them to diversify their diets with things like bugs and plants.

Its important to note that "pasture-raised" is not monitored by the U.S. Department of Agriculture, so its up to consumers to do their research and be sure the eggs they buy have the qualities that matter to them.
