Coins in Mario Kart have three main uses:

Increase overall speed: Each coin you collect boosts your overall speed, and the effect maxes out at 10 coins. Increasing your top speed, especially on straightaways, can make all the difference in a race.

Give a small speed boost: For each coin you collect, you get a very, very tiny speed boost -- even after youve collected the maximum of 10 coins. So keep collecting them! Utilizing these boosts can make all the difference in a race.

Unlock stuff: You must collect coins to unlock karts and parts. Each coin you collect adds to an overall coin count. Every unlockable is tied to this coin count, and parts are unlocked for every 50 coins and then every 100 coins you collected after you unlock the 1000 coin customization item.
To collect coins, you simply must run into them while driving. Mario Kart keeps track of this. If you play online, you will get coins based on shared system. Perhaps the best way to collect coins is to play local multiplayer. Every coin collected by every player is directly added to your coin count.
