Birria tacos are a popular Mexican dish that has gained popularity in North America in recent years. Birria is a meat stew or soup made from goat, beef, lamb, mutton, or chicken that is marinated in an adobo made of vinegar, dried chiles, garlic, and herbs and spices before being cooked in a broth. Birria tacos are made by filling tortillas with the stews tender, juicy meat and dipping the tortillas in the thin layer of fat that floats to the top of the birria before being pan-fried, giving them their crispy exterior. The tacos are served with the consommé, or broth from the stew, on the side, topped with onions and cilantro, and are often filled with melty Oaxacan cheese (quesillo) . The popularity of birria tacos has led to the creation of fusion dishes like birria wontons, birria grilled cheese, birria egg rolls, and birria ramen. Birria is a traditional Mexican dish from the state of Jalisco and is often served at celebratory occasions such as weddings, funerals, and baptisms and during holidays such as Christmas and Easter.
