A combi oven is a type of oven that combines the functionalities of three ovens in one: convection, steam, and a combination of steam and convection. Combi ovens are also known as combi-steamers, hot-air steamers, combination steam-convection ovens, or simply combi ovens. They are used primarily to prepare food for larger numbers of people at one time and replace practically all conventional industrial-scale cooking appliances, such as convection ovens, stoves, pots, and grills. Combi ovens offer multi-stage cooking cycles which allow you to cook a number of different menu items that would normally require multiple steps and stages otherwise. Some programmable combi ovens have memory capabilities for more than 200 cooking cycles with various cooking steps. Combi ovens are versatile and can be programmed to perform processes involving several sequential steps, and also save these programs to an electronic cookbook. They are used in commercial kitchens and are also available for home use.
