A Sacher Torte is a chocolate cake, or torte, of Austrian origin, invented by Austrian Chef Franz Sacher in 1832 for Prince Metternich in Vienna. It is one of the most famous Viennese culinary specialties. The classic Sacher Torte is made with chocolate cake layers, apricot preserves, and a shiny chocolate-glaze finish. Lidia Bastianichs version uses the preserves three ways: for the cake layers, as a filling, and as a glaze. The “original” cake is still sold at the Hotel Sacher in Vienna. A traditional decoration for Sacher Torte is to pipe the word Sacher on top with melted chocolate once the glaze is set.
