Candy corn is a small, pyramid-shaped candy that is typically divided into three sections of different colors, with a waxy texture and a flavor based on honey, sugar, butter, and vanilla. It is considered a "mellow cream," a name for a type of candy made from corn syrup and sugar that has a marshmallow-like flavor. Candy corn is made with sugar, corn syrup, salt, sesame oil, honey, artificial flavor, food colorings, gelatin, and confectioners glaze. The confectioners glaze is made from lac-resin, a bug secretion. The recipe for candy corn hasnt changed much since the late 1800s, but the way its made has changed quite a bit. In the early days, workers mixed the main ingredients – sugar, water, and corn syrup – in large kettles. Then they added fondant (a sweet, creamy icing made from sugar, corn syrup, and water) and marshmallow for smoothness. Then they poured the mixture into kernel-shaped molds in cornstarch trays. They had to do this three times, walking backward, one for each color. Today, machines do the work. Manufacturers use a corn starch molding process, in which kernel-shaped depressions are made in a tray of corn starch. Candy corn is made from tip to tip in three-color passes. First, the depression is filled with partially set white candy, known as mellowcreme. Next, the orange mellowcreme is added. The mold is then finished by adding the yellow mellowcreme, and the entire candy is left to cool and harden.
