Processed meat, which is meat that has been preserved by smoking, curing, salting, or adding preservatives, is also considered red meat and includes items such as sausages, bacon, ham, and deli meats such as salami. Chicken, turkey, duck, goose, game birds, and rabbit are not considered red meat.
