Hake is a type of fish that belongs to the Merlucciidae family of the northern and southern oceans and the Phycidae family of the northern oceans. It is a commercially important fish in the same taxonomic order, Gadiformes, as cod and haddock. Hake is a medium-to-large fish that can grow up to 1 meter in length and weigh up to 27 kg. It is a deep-sea fish that can be found in the Atlantic Ocean and Pacific Ocean in waters from 200 to 350 meters deep. Hake is a versatile fish with a mild flavor and a texture slightly more delicate than haddock. It is sometimes referred to as “poor man’s haddock” but is not lesser in quality. Hake is a sustainable fish, and hake carrying the blue MSC label is certified sustainable. There are at least 13 varieties of commercially fished species of hake throughout the world, and although there are differences in appearance, they all share similar culinary traits regarding taste and texture. Hake is often used as a good, cheaper alternative to cod, haddock, and pollock, especially as a frozen or processed product.
