An induction stovetop, also known as an induction cooktop or induction hob, is a type of electric cooktop that uses direct electrical induction heating of cooking vessels, rather than relying on indirect radiation, convection, or thermal conduction. Induction cooking allows high power and very rapid increases in temperature to be achieved, and changes in heat settings are instantaneous. Cooking vessels with a suitable base are placed on an induction electric stove, which generally has a heat-proof glass-ceramic surface above a coil of copper wire with a low radio frequency alternating electric current passing through it. The resulting oscillating magnetic field induces an electrical current in the vessel, which heats up the cookware directly.

Induction cooking provides fast heating, improved thermal efficiency, and more consistent heating than cooking by thermal conduction. Generally, the higher the power rating, the faster the cooking time. Induction cooktop power ratings are generally quoted for power delivered to the pan, whereas gas ratings are specified in terms of gas use, but gas is much less efficient. Induction-compatible cookware can nearly always be used on other stoves. Some cookware or packaging is marked with symbols to indicate compatibility with induction, gas, or electric heat.

Induction cooktops have several advantages over gas stoves, including safety advantages and no air pollution into the kitchen. They are also usually easy to clean, because the cooktop itself has a smooth surface and does not get very hot. Induction stovetops are highly efficient, allowing for a rapid rise or drop in temperature, and produce less waste heat than other types of stovetops. They are also more environmentally friendly, as they are 5 to 10 percent more energy-efficient than conventional electric stoves and about three times more efficient than gas stoves.

To determine whether a stove is an induction stovetop, one can turn the stovetop on without any cookware on top. If the surface heats up significantly or begins to glow, it is not an induction stovetop. If the cookware heats up, it is an induction stovetop.
