Minari is a fragrant vegetable plant that is used extensively in Korean cooking, fresh but often blanched, cooked in stews, and added to Kimchi. It has a delicate flavor with a grassy, peppery aftertaste. Minari is a major vegetable crop in Korea and is commonly served as a banchan called minari muchim, where the greens are simply blanched and seasoned with garlic, soy sauce, and sesame oil. The plant contains persicarin and isorhamnetin. The 2020 drama film Minari is named after the vegetable, which appears in the movie.
