Pad Thai is a popular stir-fried noodle dish from Thailand made with rice noodles, eggs, and chopped firm tofu, flavored with tamarind juice, fish sauce, dried shrimp, garlic, shallots, and palm sugar, and served with lime wedges and often crushed roasted peanuts. The noodles used in Pad Thai are thin, flat rice noodles. Other common ingredients include bean sprouts, garlic chives, preserved radish, and raw banana flowers. The dish can also contain fresh shrimp, crab, squid, chicken, or other fish or meat. Vegetarian versions may substitute soy sauce for the fish sauce and omit the shrimp entirely.
