Pho is a Vietnamese noodle soup that typically includes rice noodles, meat, and fresh garnishes. The noodles used in pho are called banh pho, which are flat rice noodles. They are different from the round bun rice vermicelli noodles used in other dishes like rice noodle bowls and rice paper salad rolls. Banh pho noodles are available fresh and dried, but the dried ones have a terrific chewiness that’s practically as good as fresh. The noodles are typically cooked separately and then added to the broth when serving.
