Pad Thai is a Thai noodle stir-fry dish that is made with rice noodles, shrimp, chicken, or tofu, peanuts, a scrambled egg, and bean sprouts. The noodles used in Pad Thai are flat, dried rice noodles that can be found in everyday supermarkets. Some recommended brands for rice noodles for Pad Thai include Changs “Thai style” rice noodles and thin rice noodles. To make vegan or vegetarian Pad Thai, leave out the egg and substitute the fish sauce for more soy sauce.
