To maintain a cutting board, it is important to use a food-safe oil that can repel liquids and keep the board moisturized. The following oils are safe to use on a cutting board:

  • Mineral oil: Regular application of mineral oil will prevent cutting boards from becoming dry and brittle, which can cause a cracked board. A board that is treated with oil also prevents liquids from penetrating the board, which is often the source of germs and bacteria. Mineral oil is ideal for finishing a food-preparation surface like a wood cutting board because it has no smell, color, or taste.

  • Beeswax: Beeswax is a natural wax produced in the bee hives of honey bees and has a variety of applications. Use beeswax to hydrate, shine, and waterproof a cutting board.

  • Fractionated coconut oil: This oil absorbs into the wood fibers of a wood cutting board to keep it moisturized. Fractionated coconut oil is shelf-stable and food-safe.

When applying oil to a cutting board, be generous with the application, especially if the wood is dry or you just purchased the cutting board or butcher block. Spread the oil using a small bar towel or new paintbrush to avoid accidental splinters. Let the oil soak into the cutting board for as long as possible; at least a few hours or overnight if possible. Let your cutting board sit on a wire rack or upright to dry when done. If you are restoring or seasoning an old, dry or new cutting board, you may wish to repeat this process two more times, to ensure your cutting board is completely seasoned.
