The primary gustatory cortex, which is located in the cerebral cortex, is responsible for processing taste. It consists of two substructures: the anterior insula on the insular lobe and the frontal operculum on the frontal lobe. The gustatory cortex is the final stop for information gathered by the taste buds. Taste signals move from the taste buds in the tongue to the brain through cranial nerves. The signal is first received by areas in the brainstem, which connects the spinal cord with the rest of the brain. The signal then moves to the thalamus in the brain. Finally, the thalamus passes the signal onto the gustatory cortex, where the taste signal is interpreted.
