The internal temperature for burgers depends on how you like your burgers cooked. According to the USDA, ground meat should be cooked to a minimum temperature of 160°F (71°C) which will give you a well-done beef burger. However, if you like your burgers less done, aim for one of the following temperatures:
- Medium-rare: 130°F to 135°F (54°C to 57°C)
- Medium: 140°F to 145°F (60°C to 63°C)
- Medium-well: 150°F to 155°F (66°C to 68°C)
Keep in mind that your burger patties will continue to cook (because of residual heat) even after being removed from the grill, so if you want to reach the desired temperatures above, youll need to take the patties off 5 to 10 degrees before they reach their ideal temperature. To check the temperature of your burger, insert your thermometer horizontally from the side to reach the thickest part of the burger and get an accurate read. The cooking time for burgers depends on the thickness or size of the patties, but a general guideline is to grill for about 2 1/2 minutes per side or five minutes total for a medium-rare patty with a red-pink center and browning around the edges. Thinner patties will be done on the earlier side and extra-thick patties may need a bit longer, so always use your thermometer to be safe.
