The traditional noodle used in Pad Thai is rice noodles. These noodles are flat and dried, and can be found in most everyday supermarkets. They are stir-fried with eggs and chopped firm tofu, flavored with tamarind juice, fish sauce, dried shrimp, garlic, shallots, and palm sugar, and served with lime wedges and often crushed roasted peanuts. Pad Thai may also contain other vegetables like bean sprouts, garlic chives, preserved radish, and raw banana flowers, and may contain fresh shrimp, crab, squid, chicken, or other fish or meat. Vegetarian versions may substitute soy sauce for the fish sauce and omit the shrimp entirely.
